What actually separates the two machines
Both machines are sold on the same promise — a fresh, sanitized interior — and both use heat and water to get there. The difference is what happens to the dirt once it lets go of the fiber, and for car carpet that is the entire decision.
A carpet extractor runs a three-stage cycle. A pump sprays cleaning solution into the fiber, a brush or the tool head agitates it, and a vacuum motor immediately pulls the liquid back out through the same head into a sealed recovery tank. The suspended soil, the detergent and the water all leave the vehicle together. You can literally see the result: the recovery tank on a car interior that has never been extracted usually comes out coffee-colored, and that color is dirt that is now in a bucket rather than in your footwell.
A steam cleaner has no recovery stage at all. A boiler heats water past its boiling point and delivers it as a low-moisture vapor at roughly 200 to 300°F. That heat breaks the bond between soil and fiber and kills bacteria on contact. But the soil is still sitting in the carpet when the pass is over — it has simply been loosened. Getting it out is your job, done with a microfiber towel, and a towel can only absorb so much before you are pushing dirt around instead of lifting it.

- Odor lives below the surface. Pet accidents and old spills leave organic material in the padding. A steam cleaner will kill bacteria at the surface and the smell will be gone for a few days, then return once the padding warms up again in the sun. The consensus among interior detailers is that odor removal means physical removal, and only extraction does that.

"Steam cleans deeper than extraction." Steam penetrates deeper as heat, but it has no mechanism to bring anything back out. Depth of cleaning in carpet is measured by what leaves the vehicle, and only extraction does that.
"An extractor replaces vacuuming." It does the opposite — extracting unvacuumed carpet turns loose grit into a slurry that works further into the backing. Vacuum thoroughly, ideally with a brush attachment to lift the pile, before any liquid goes in.
"Household carpet shampoo is fine in a car extractor." It is not. High-foam house formulas overwhelm the recovery tank, leave a tacky residue in short automotive pile and cause carpet to re-soil noticeably faster. Low-foam automotive extraction solution exists for a reason.
"Steam is safe on everything because it is just water." At 250°F it is not gentle.
